As we all know, Children with Cancer often struggle to eat due to problems with their mouths or throats due to their treatment, or because cancer treatment makes one nauseous and takes away the appetite.
Eating well and getting sufficient nutrition, however, is paramount in building up their immune systems and in helping them to maintain their weight and fight the cancer

Healthy Pesto Pasta
All the greens in this delicious pasta are extremely healthy, as are the nuts, and this is a great way to get the children to eat veggies and actually enjoy them. The pasta is delicious without being too rich.
- 450 grams whole grain penne pasta
- 1 cup packed fresh basil
- 1 cup packed dark greens (spinach, kale, chard)
- 1/4 cup toasted walnuts or pine nuts
- 1/4 cup parmesan cheese
- 1 clove garlic
- Extra-virgin olive oil
- Salt and pepper to taste
- Cook pasta according to box directions.
- While pasta is cooking place basil, dark greens, nuts, and parmesan in food processor. Pulse four to five times to break down ingredients.
- Drizzle a bit of olive oil into food processor and pulse.
- Slowly drizzle remaining oil into processor until smooth paste forms.
- Add salt and pepper to taste.
- Fold pesto into warm or cooled pasta &Serve.
Greek Chicken Kebabs
Fire up the grill for this yummy recipe and do something other than heavy steaks or dry chicken pieces on your braai. These kebabs are so flavourful you’ll forget that they are actually very healthy!
- ¼ c. olive oil
- 2 tbsp. fresh lemon juice
- 2 tbsp. red wine vinegar
- 1 tbsp. chopped fresh oregano (or 2 tsp. dried)
- 2 cloves garlic, minced
- ½ tsp. salt
- ¼ tsp. black pepper
- 680 grams chicken breast, cut in 2-inch pieces
- 1 zucchini, sliced
- 1 punnet cherry tomatoes
- In a large glass or ceramic bowl, whisk together olive oil, lemon juice, vinegar, oregano, garlic, salt and pepper. Add chicken and toss to coat. Cover and refrigerate 30 minutes.
- Heat grill to medium high. Thread chicken, zucchini, and tomatoes onto skewers. Grill until chicken is done, about 8 minutes on each side (internal temperature should be 165° F).
Power Bomb Energy Bites
These little nuggets with protein and fibre will give your little one long-lasting energy, and they will thoroughly enjoy them
Makes 18 energy bites
- 1/2 cup slivered almonds, toasted and chopped
- 1/2 cup dry powdered milk
- 1/2 cup dry tart cherries, roughly chopped
- 2 tablespoons cocoa powder
- 1/2 cup brown rice, cooked and cooled
- 1/2 cup almond butter
- 1/2 cup brown rice syrup, or other liquid sweetener
- 1 cup dry instant oatmeal
- 1 tablespoon cinnamon
- 1/2 cup white whole-wheat flour
- 1 dash vanilla extract
- 1/2 cup flax seeds, toasted and ground
- Combine all ingredients except flax seeds
- Mix until incorporated
- Using an ice-cream scoop, scoop out balls and roll them in the flax seed
- Store in an airtight container
